Appearance

The olive is a graceful, billowing tree growing to 50 feet in height with a spread of about 30 feet. The attractive, gnarled branching pattern is quite distinctive. The olive's feather-shaped leaves grow opposite one another. Their skin is rich in tannin, giving the mature leaf its gray-green appearance. The small, fragrant, cream-colored olive flowers are largely hidden by the evergreen leaves and grow on a long stem arising from the leaf axils. The fruit of the olive tree is green, becoming generally blackish-purple when fully ripe. The shapes range from almost round to oval or elongated with pointed ends. Olive trees are long-lived, with a life expectancy of 500 years.

History

The ancient Egyptians may be been the first to put the olive leaf to practical use. They regarded it as a symbol of heavenly power, and in keeping with that belief, they extracted its oil and used it to mummify their kings. In later cultures, olive leaf was a popular folk remedy for combating fevers. In England, in 1854, a popular pharmaceutical journal carried a report that contained the following simple therapeutic recipe:

Boil a handful of leaves in a quart of water down to half its original volume. Then administer the liquid in the amount of a wineglass every 3 or 4 hours until the fever is cured.

This remedy became well known in England for treating sick Britons returning from tropical colonies. The author asserted that a bitter substance in the leaves was the key ingredient. He was right. Decades later, scientists isolated a bitter substance from the olive leaf and named it oleuropein. Oleuropein was found to be one ingredient in a compound produced by the olive tree that makes the tree particularly robust and resistant to insect and bacterial damage. Oleuropein is present in olive oil, throughout the olive tree, and is, in fact, the bitter-tasting substance that is eliminated from the olives when they are cured.
