A: The whey is pasteurized.
Q: What does Extra Grade mean?
A: Dry whey products in the US fall under certain standards set by the United States Department of Agriculture (USDA). Extra Grade meets certain requirements for flavor, physical appearance, milk fat content, and moisture content.
Q: What is sweet whey?
A: Whey is a byproduct of cheese-making. “Sweet” refers to whey with a pH ≥5.6, coming from certain cheeses, such as cheddar and mozzarella, as opposed to “acid” whey that has a pH ≤5.1. Despite the name, there is no sweetener added to sweet whey.
